Courgette, Basil & Parmesan Salad

This raw courgette salad is refreshing and lovely — and will certainly impress your dinner guests! A vegetable peeler makes it easy to create pretty courgette ribbons.

You will need:

  • Extra-virgin olive oil
  • 1 lemon
  • Coarse sea salt
  • Freshly ground black pepper
  • Coarsely chopped fresh basil
  • Pine nuts, toasted
  • Parmesan cheese
  • Courgette
  • Salad leaves


  1. Grate the parmesan into a bowl, then drizzle in a good glug of olive oil, squeeze in the juice of 1/2 a lemon, add a pinch of salt and pepper, then whisk together. Taste and add more salt / pepper / parmesan or oil to taste. Set dressing aside.
  2. Using vegetable peeler and working from top to bottom of each courgette, slice the courgette into ribbons.
  3. Place salad leaves in a large salad bowl, add the courgette ribbons, the basil, pine nuts and the dressing, then toss together and season with salt & pepper!
