These Padron peppers are great at dinner parties or even as a fun snack for a movie night. If you stuff them with some cream cheese then they are a perfect canape too! These peppers are referred to as “Spanish roulette” as there is no way of guessing which Padron peppers are sweet and which are spicy until you bite into them! They are incredibly easy to prepare, just blister them quickly in a bit of very hot olive oil, just until the skin starts to turn dark brown. Then, sprinkle liberally with coarse salt. That’s it! You can also add a squeeze of lemon, or sprinkle over some smoked paprika, if you prefer. Or fill them with a bit of cream cheese to mellow them out.
You will need;
- Small Pimiento de Padron peppers
- Olive oil
- Sea salt
- Heat a frying pan over medium heat, drizzle in some olive oil.
- Heat the small peppers until blistered, remove and add the sea salt flakes, and serve.
