Pancetta Avocado Toast

Okay, this hardly counts as a recipe but if ever you need some breakfast / brunch / lunch inspiration these crispy pancetta and avocado toasts are HEAVENLY – especially on home baked bread if you have the time! This also works great for entertaining – use ciabatta slices as a bruschetta alternative, or use little melba toasts to make little canapes.

You will need:

  • Bread
  • 1 ripe avocado
  • Pancetta strips
  • Salt & Pepper

All you need to do is:

  1. Fry the pancetta until crispy, then place them on some kitchen paper
  2. Toast some bread – either in the toaster or in the oven
  3. Mush the avocado onto your toast with a fork (make sure the avocado is soft otherwise it will break the bread)
  4. Top with crispy pancetta, and a sprinkle of salt and pepper.

Simple but oh-so-gooooood!! This flavour combination can work just as well on little melba toasts as a tasty canape if you’re having friends round.
