Tabbouleh Salad

I know I’ve posted a lot of salads but in my opinion the traditional Tabbouleh salad is the KING of salads!! It tastes so so fresh, is beautifully colourful, looks great at the dinner table, is perfect for Summer barbecues and works great as a side dish / side salad.

You will need:

  • 1 large handful of bulgar wheat (or couscous if you can’t find bulgar wheat)
  • 2 bunches of fresh parsley, finely chopped
  • 1 bunch of fresh mint, finely chopped
  • 1 bunch of fresh coriander, finely chopped
  • 1 bunch of spring onions, finely chopped
  • 1 punnet of cherry or plum tomatoes, chopped / quartered
  • ½ cucumber – peeled and chopped
  • 1 pomegranate – deseeded (keep only the seeds, discard the white stuff)
  • Juice of 1 lemon
  • Olive oil
  • Salt & pepper

Method:

  1. Rinse the bulgar wheat or couscous in a sieve, then place in a bowl and cover with boiling water (check packet instructions)
  2. In a separate bowl, combine the finely chopped parsley, mint, coriander, spring onions, chopped tomatoes and cucumber
  3. Mix in the bulgar wheat or couscous, squeeze in the lemon juice and pour in a generous glug of olive oil and season with salt & pepper
  4. Decorate / top with the pomegranate seeds
