This summery lunchtime salad is a favourite – it’s refreshing, light and crunchy. If you don’t have pecan nuts then toasted pine nuts or walnuts work just as nicely!
To serve 2 people you will need:
- 1 bag of mixed salad leaves
- 1 punnet of red grapes, washed and halved
- 2 ripe avocados, cut into bite sized pieces
- 1 handful of pecan nuts, chopped
- 1 block of soft goats cheese
For the dressing you will need:
- Olive oil
- Honey
- Mustard
- Balsamic Vinegar
- 1 clove of garlic
- Squeeze of lemon
Method:
Empty the bag of mixed salad leaves into a salad bowl and add the chopped grapes, chopped avocado and pecan nuts, then crumble the soft goats cheese over the top.
For the dressing, mix together a generous glug of olive oil with a spoonful of honey, spoonful of mustard, drizzle of balsamic vinegar and a crushed of finely chopped clove of garlic and a squeeze of lemon juice. Drizzle over the salad and add salt & pepper to taste!
